Ingredients
- 1 tsp Olive oil (4 grams)
- 1/3 cup Asparagus (45 grams)
- 1/3 cup, chopped Onions (54 grams)
- 2 2/3 oz Spaghetti (75 grams)
- 1 clove Garlic (3 grams)
- 1/3 cup Parmesan cheese (33 grams)
Directions
1. Preheat oven to 450 degrees F. Line a large baking sheet with foil. Combine chopped asparagus and onion with olive oil to coat. Spread onto baking sheet and roast for about 15 minutes.
2. Bring a pot of salted water to a boil. Boil pasta according to package directions. Drain and reserve 1 cup pasta cooking water.
3. Combine pasta, asparagus/onion mixture, garlic and as much reserved cooking water as needed in the pasta cooking pot. Toss everything together. Serve with Parmesan cheese to sprinkle on top.
