BBQ Chicken Salad – 520 Calories

Ingredients

  • 8 oz Chicken breast (227 grams)
  • 1/2 tbsp chicken seasoning (2 grams)
  • 1 spray , about 1/3 second Pam cooking spray (0.30 grams)
  • 1 ear Corn (103 grams)
  • 2 cup shredded Lettuce (94 grams)
  • 2 tomatoes (246 grams)
  • 2 tbsp Sour cream (24 grams)
  • 1 tbsp Barbecue sauce (17 grams)

Directions

1. Season the chicken wth the poultry seasoning mix. Cook chicken on a grill or grill pan sprayed with oil over medium heat for about 5 minutes on each side, or until the chicken is cooked through in the center. Transfer to a cutting board and slice thin.

2. Place the corn in the microwave for 4 minutes (or you can peel and boil in water for 5 minutes). Peel the husk off the corn, then cut the corn off the cobb.

3. Divide the lettuce, tomatoes, corn, and chicken on two plates, then drizzle with BBQ Sauce and thinned sour cream dressing. Enjoy!
