Broccoli Potato Soup – 370 Calories

Ingredients

  • 1/2 tbsp Olive oil (7 grams)
  • Leeks (45 grams)
  • Carrots (61 grams)
  • 1/2 Potato (185 grams)
  • 2 1/2 cloves Garlic (7.5 grams)
  • 1/2 tsp Salt (3 grams)
  • 1/2 bunch Broccoli (304 grams)

Directions

1. Cut the leek and fry in oil in a skillet over medium heat.

2. After few minutes add chopped carrots, potato, and salt.

3. Add hot water to cover and bring to a boil. Cook until potatoes are fork tender.

4. Add chopped garlic and broccoli.

5. Boil for few minutes until broccoli is tender.

6. Transfer mixture to a blender or use a stick blender to pulse until smooth. Serve hot and enjoy!
