Ingredients
- 2 slice oval Roast beef, deli style, prepackaged, sliced (6 grams)
- 4 oz Provolone cheese (113 grams)
- 1/2 medium (approx 2-3/4″ long, 2-1/2 dia.) Red bell pepper (60 grams)
- 2 tbsp Dijon mustard (30 grams)
- 2 outer lettuce leafs
Directions
1. Slice red bell pepper into 1” wide “sticks.”
2. Lay out 1 large outer lettuce leaf. Fold beef in half and lay on lettuce leaf. Place provolone slice on top of beef.
3. Spread mustard over surface of cheese.
4. Place 2 red bell pepper “sticks” in center. Fold up lettuce leaf to contain all the contents.
5. Repeat with the other lettuce leaf.
